Utensils Required
Ninja Foodi 8-in-1 Flip Mini Oven SP101
Ninja 3-in-1 Food Processor with Auto-IQ BN800

Ingredients
5.25oz unsalted butter (melted)
2.8oz white sugar
4.2oz light brown sugar
2 egg yolks
1/2 tsp bicarbonate of soda
1 zest from lemon
8.05oz plain flour
4 tbsp shredded coconut & flakes
4.2oz icing sugar
2tbsp lemon juice

Method
#1 Using your Ninja Food Processor, combine the melted butter, white, and light brown sugar for about 10-15 seconds.

#2 Add egg yolks, bicarbonate of soda, lemon zest, flour, and desiccated coconut to the mix, and blend for another 30-60 seconds until your cookie dough forms.

#3 Roll the dough into even-sized balls, place them on a tray, and refrigerate for 2 hours.

#4 Set your Ninja SP101 oven to bake at 338F (170C) degrees (preheat a regular oven 10-15 minutes beforehand if necessary).

#5 Arrange the cookies on a baking tray lined with greaseproof paper, ensuring ample space between each.

#6 Bake for 12-13 minutes.

#7 Once cooled, drizzle with a mixture of icing sugar and lemon juice, and sprinkle with extra shredded coconut & flakes for an extra tropical twist.
